Xiǎochī, or 'small eats', are snacks and one-dish meals sold from stalls, carts and tiny shops rather than restaurants. A single stall often makes just one or two things, such as fried chicken cutlets, stinky tofu or scallion pancakes, and may have refined them over decades. Portions are small by design, so you can eat your way down a street instead of settling at one table.
