Night markets (夜市) are where much of Taiwan's street food lives: each is a loose crowd of stalls with its own specialties, from oyster omelets and stinky tofu to pepper buns, sweet potato balls and fruit juices. Stalls usually open in the late afternoon and run until midnight or later, and many take cash only, so carry small bills. Order small, share plates, and keep moving.
