鮮蒸蝦仁肉圓
The restaurant
Opened in 2012 by a group of young people, Shian Jeng is a bright, air-conditioned shop that makes its ba-wan fresh each day. The skin is a soft, translucent rice-flour dough wrapped around small spear shrimp and fresh pork shoulder, steamed on the spot and finished with a sweet-savory sauce; a dab of mustard sharpens it.
Ba-wan are sold by the piece, so they can be a snack, or a meal alongside sishen soup or shiitake and pork thick soup. Mondays are closed, and irregular closing days are announced on the shop's social media page, so check before you go. Cash only.
Awards are shown exactly as recorded for the year given. Guides update their lists every year.

Around the corner
East District lies on the old city's eastern side, with wider streets and a mix of old shops and new. Dadong Night Market is here; the Tainan tourism bureau calls it the city's second-largest, open Monday, Tuesday and Friday. On Yunong Road, Shian Jeng opened in 2012 and steams ba-wan with a rice-flour skin around small shrimp and fresh pork, while Linsen Road has a small shop known for duck thick soup.
Tainan Station is also in East District, and from it a short taxi or bus ride reaches the old city's food clusters.
